What is Processing?
Processing refers to the journey coffee takes once it has been picked.
Traditionally, the two most recognized methods are washed and natural:
• Washed coffees are stripped of fruit and thoroughly cleaned to remove skin and mucilage. They are known for their cleaner profiles, higher acidity, and greater complexity.
• Natural coffees are dried with the fruit intact, which imparts more sweetness and body to the cup.
In recent years, quality-focused producers have introduced modern processing techniques that have expanded the range of flavours available. Methods such as Honey, Anaerobic Fermentation, Carbonic Maceration, Koji, and Co-Ferments have transformed the way coffee tastes, offering diverse and distinctive profiles that continue to push the boundaries of specialty coffee.
