Honduras Siguatepeque

Cooperativa Cafetalera Siguatepeque Limitada (COHORSIL) is a grower's co-operative situated in-between two of the country's most productive growing regions.

The operation is run with militant precision and works through an enormous amount of coffee cherries. 

Completely certified in Quality Management Systems by the International Organization for Standardization (ISO-9001), the team produces incredibly consistent coffee quality year after year.

With a close eye on sustainability, COHORSIL has implemented some fantastic techniques to lower wastage. 

The coffee pulp that is often discarded is the base ingredient for their organic fertiliser, and the addition of California earthworms helps to promote decomposition.

Their processes use very little water. The coffee parchment, another waste product from the coffee fruit, is dried and used as fuel for onsite furnaces called ‘guardiolas', which slowly heat and dry the processed coffee bean to a state ready for storage and shipping.

This coffee makes a delightful cup. Brewed with a paper filter, you get a velvety mouth feel, sweet red apple and a touch of grapefruit-like bitterness in the aftertaste. This coffee also is fantastic as espresso and espresso based milk drinks.
