Timor is a small island found in the southern islands of Indonesia, not too far away from northern Australia.
Portuguese colonists introduced coffee over 400 years ago to the area but saw production halt due to plant disease.
In the 1900s, a new coffee variety was developed, ‘Híbrido de Timor’, which holds a much higher disease resistance, allowing farmers to reintegrate coffee crops into their land.
The average small producer on the island works with less than one hectare of land.
Still, as the local industry developed further, more than 20,000 people joined forces with the Cooperativa Café Timor (CCT).
The CCT is an organization established in 1994 with the help of the USDA and works closely with producers, offering its members extensive access to health care and giving the community a solid base to export their coffee to the global market.
This coffee is certified organic and fair trade and offers a buttery mouthfeel with some light, sweet, fresh tropical fruits, like papaya.
We recommend that this coffee be brewed as a filter coffee, although the fruit notes and light acidity are more pronounced as an espresso.
